To understand and evaluate consumer perception, Actilait has developed its sensory evaluation activity specialising in food products, known under the trade name Les Maisons du Goût (3 laboratories in France).

 

The main areas of intervention:

  • Consumer tests in the laboratory and at home,
  • Diagnosis of strong points and areas of optimization as far as organoleptics and packaging are concerned,
  • Descriptive approaches of aspect, smell, consistence, aroma and taste characteristics,
  • Determination of a sensory similarity or difference between two samples,
  • Diagnostic and qualitative studies of product mix elements.

The centre has a multiregional panel of over 5000 consumers and qualified groups specialised by product type for the descriptive approaches. For a more detailed measure of cheese aromas, an innovating approach enables up to 110 smell, aroma and test characteristics to be evaluated. This centre also animates the Joint Technological Network “Sensorialis”.
